Born in Hong Kong, Wai Hon Chu completed his training at the Art Institute of New York and has worked in the kitchens of March, Clementine, and the Russian Tea Room. In 1999, he launched El Eden Chocolates, creators of more than 25 truffles that dazzled the New York Times, NPR, Food & Wine, and many others.
